Nature's Trinity

Vegetable Stew Mix

Serves 2.

Ingredients:

  • Prepare a large pot by adding Extra Virgin Olive Oil to cover the base of the pot. Add the juice of one Lemon. Add water to half the level of the saucepan.
  • 3 Red potatoes, diced.
  • 1 Tomato diced.
  • A small piece of pumpkin, skin removed and diced.
  • Half a sweet potato, diced and peeled.
  • 1 Onion diced, skin removed.
  • 1 Broccoli chopped.
  • A quarter of a cauliflower chopped.
  • 1 bunch of Silverbeet leave the stems, and chop the green leaves. Place the stems in a container and refrigerate for the next Silverbeet meal.
  • 2 Carrots diced.
  • 1 Slice of fresh Ginger, grated.
  • 3 cloves of fresh garlic, chopped, and the skin removed
  • A pinch of Himalayan Pink salt
  • A sprinkling of Cayenne Pepper, Italian Herbs, Mixed Herbs, Turmeric, Chives, Marjoram and Cumin Seeds.
  • When the ingredients have softened, add a small amount of frozen peas and beans. Combine the ingredients thoroughly,
  • Turn the heat off, move the pot, and let it stand for a while before serving. This will ensure the frozen food continues to cook.
