I do not use any additives in the potatoes, apart from water to boil them with the skin on.
When they have reached their tenderness level, I use a tablespoon to lift each potato out and remove the skin.
When the skins have been removed the clean potatoes are placed into another pot to be mashed.

Use only the water which the potatoes were boiled in to add back to the mashed potatoes. Do not use all the boiled water only, use a part of it to make the mashed potatoes look light and fluffy.
They say all the nutrients of the potatoes lay just beneath the skin and by cutting the skin off first, the nutrients are lost. When the potatoes are first boiled, this adds a nice flavour to the mashed potatoes.
Had them for lunch today with side vegetables.
