Ingredients: Pumpkin, carrots, sweet potatoes, red skin potatoes, onions, herbs, and spices.
Pour extra virgin olive oil over the vegetables and potatoes. Sprinkle the herbs over everything in the baking tray.
Leave the skins on the pumpkin, sweet potatoes, and carrots for added taste. Remove the brown onion skin. Roast in an oven for 35 minutes at 190 degrees. Poke a metal fork through these veggies and check for tenderness.
